Adding salt and dried herbs to a simmering pot. This is a no brainer. Everyone knows how to do this the correct way, 'cept me.
No one ever taught me to pour dried herbs or spices into the palm of my hand or into a measuring spoon first and then poor into the steaming sauce pan. As a young bride, I did it the wrong way for years, so this post is for young cooks who don't know the 'Why' we do it this way approach.
As I grew in my cooking knowledge and years as a young wife, I noticed that the cooks on tv poured dried ingredients into their hand and then tossed it into the pot. They would never shake the bottle over the steam like I did. I wondered why. Well, this should be a no brainer, but I did not get it.
In case you are like me and don't get it, I will tell you the answer. The dried herbs are meant to stay dry. If you shake them over a steaming pot they will absorb moisture and will lose their staying power and become stale; might even mold. Now you know!! Like me, maybe the light bulb has turned on!! Ha ha.
